- 1 can (15 oz) chickpeas, drained and rinsed (400 g)
- 1 cup (240 ml) coconut milk
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 bell pepper, chopped
- 1 medium zucchini, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add garlic and ginger, cooking for another minute until fragrant.
- Stir in curry powder and turmeric, cooking for 1-2 minutes to release the flavors.
- Add bell pepper and zucchini, cooking until slightly tender, about 5 minutes.
- Add chickpeas and coconut milk, stirring to combine. Bring to a simmer and let cook for 10 minutes.
- Season with salt and pepper, then serve hot, garnished with fresh cilantro.
Notes
- Serve with rice or naan for a complete meal.
- Adjust the spice levels by adding chili powder if desired.
